This caviar is nothing more than the Alaskan salmon roe with bright pink from Alaskan wild-caught salmon. You can use in many different dishes, from sushi dishes or to topping seafood canapés.

What is chum salmon?

The chum salmon belongs to the Salmonidae family. In short, it is a fish from the Pacific and is also known as dog salmon or keta salmon. You might see it marketed as silverbrite salmon, too. The name chum salmon comes from the Chinese term tzum, which means “spotted” or “marked”, while keta comes from the Eastern Siberia’s Evenki language.

Is your chum salmon wild-caught?

On top of looking at the product label, there is another way of making sure your chum salmon is wild-caught: trust the colours! Aquaculture chum salmon is lighter and pinker, while the wild-caught variant has a deeper reddish-orange hue. Unlike wild salmon, farmed salmon don’t have to fight against upstream currents, hence the fatty marbling flesh (wavy white lines).

What should I expect red caviar to look like?
