The Osetra caviar is not just a rich source of protein, potassium and phosphor. It is also one of the most prized and expensive types of caviar. The only ingredients you will find are Japanese and Kaluga sturgeon (not to be mistaken with Siberian sturgeon), salt and preservative E285.

How to best serve Osetra caviar
Though caviar is best served as is and cold, common accompaniments include crème fraiche, blinis, hard-cooked eggs (yolks and whites separate), and lemon wedges. Use a mother-of-pearl spoon to scoop it out of the tin. This way, neither the caviar nor the spoon will suffer any damage. Though caviar lasts up to some weeks in the refrigerator, it is always better to buy it in increments that can be eaten in a single setting.
Natural caviar
Sturgeon roes range from black to gold, the latter being the most expensive. Rarely bigger than 3 millimetres, they are also characterised by their strength, elasticity and homogeneity in colour and size.
